About two months after my MS Diagnosis, I stopped eating beef, pork and poultry. Shortly after that, I dropped dairy. I made all of these changes for health. I continued to eat seafood. I did have some meat cravings, especially salty, junky meat like salami, hot dogs and other processed un-goodness. I fell off the dairy wagon and gave in to the voices in my head reminding me how creamy and satisfying ice cream and cheese was.
I tried a raw food diet for 30 days and found it too isolating to stick with. I must admit, I missed making soup and sharing it with my family.
Changing my diet just for health was not enough to keep me committed for the long term. Similar to the thousands of diets I’ve tried in an effort to lose weight, it wasn’t motivation enough.
While I have kept meat out of my diet, I am recommitting to stay off most dairy and seafood. This time, not just for MY personal health but for the health of animals and the general population. In my quest to learn more about food and health, I have learned too much about the big buisiness of slaughtering chickens, milking cows and raising meat.
I am all about change for health, but compassion might be the sticking point.
It must be fall because I am cooking every weekend! I love experimenting with new foods and creating meals that my family loves. Sometimes it takes a few meals that they tolerate before I serve something they love but it is usually worth the wait. This past weekend I made homemade spicy guacamole, a veggie soup with cashew cream, a Vegan “chicken” Scaloppini. During the week it is hard to find time to be creative in the kitchen.
Any suggestions for great meals during the week that are healthy and easy to prepare?
